Why Not Try Seafood?

As we enter the Lenten season, millions of people will be looking for great seafood-recipes as their alternative to meat. People who don’t know where to start will settle for less.

By being somewhat creative and relying on shelf-stable seafood, the season of Lent can be full of various mouth watering alternatives. People usually don’t know what to prepare for Lent, so they depend on ‘old faithful favorites like vegetable sandwiches, pastas and salads, stated Culinary Professional Lena Cutler. Shelf-stable seafood is very affordable and easy to substitute in your favorite meat-based dishes, said Cutler.

Canned and pouched seafood are available in many varieties, including tuna, salmon, crab, shrimp, clams and oysters, said Cutler. You can use tuna or fresh salmon fillet instead of beef for burgers, tacos, stir-fry and more. Shelf-stable seafood also has many health benefits.

In addition to being conve-nient, shelf-stable seafood is low in fat and calories, said Registered Dietician Sharon McNerney. Albacore tuna steak and salmon are major sources of protein and heart-healthy omega-3 fatty acids. The American Heart Association’s dietary guidelines recommend eating at least two servings of fish per week, because omega-3 has been proven to help reduce the chance of getting heart disease. This is a wonderful stir-fry to get your creative and digestive juices flowing: Place the chicken and the sauce in a medium bowl and stir gently. When fully mixed, set it on the side. In a large skillet, heat oil until hot; sauté garlic. Onion, celery, peppers, pea pods, cashews and water chestnuts should go in and should be cooked until the celery is ready.

Put the tuna mixture in and keep on cooking until it is hot. Pour it over hot cooked rice. Makes 4 servings.

    You can fill with pretty much anything that will roll out. Cauliflower is common, radish can be good, and so forth. Indians usually cook these with at least enough oil to cover the bottom of the pan, and that does produce a tastier and more flexible result — I would just use a good-quality high-heat oil. If you want to avoid oil altogether I would do simple chapatis instead.

    Another great way to fix asparagus is to stir fry it with garlic and ginger. Slice the tougher part of the stalk a little thinner. Dice garlic and ginger. Heat oil until almost smoking in a non-stick wok. Add garlic and ginger and stir fry for 30 seconds. Add asparagus (dry asparagus well with a paper towel before adding) and stir fry for 2 – 3 minutes more. Add a couple of tablespoons of soy sauce, stir, and turn off heat. Delicious!

    My mother treated us humanely with oil of camphor. Whenever we had swollen glands (probably tonsillitis) she would heat the oil of camphor and place it on a clean rag or towel then wrap the material around our necks. A safety pin was used to secure this. I have no idea if this worked. I reckon that anything warm and aromatic would make us feel better, along with juice and hot soup. I do know that my brother and I are a rarity for our generation because we still have tonsils.

    Uh, just to let you know, the American Heart Association has nothing to do with that Diet Coke commercial. The Department of Health and Human Services created a women's heart health campaign called The Heart Truth. It actually pre-dates the Go Red For Women movement. The Heart Truth logo appears on the Diet Coke cans, not the Go Red For Women logo. Yes, they are both Red Dress logos, but the Red Dress is the symbol of the battle against heart disease in women…much like the pink ribbons symbolizes the fight against breast cancer and the red ribbon- AIDS. In fact, the Red Dress symbol is trademarked by the DHHS. So, your consternation should be directed at the DHHS, not the AHA.

But, the current cost of gasoline is still not impacting our family budget to the point of causing pain.However, we live in the northeast and heat with oil.
